Wilmer Moncayo and his wife, Yenni, own and manage La Loma Farm, a 6.5-hectare property situated at 1,800 masl in Colombia's renowned Huila region. Although both were raised on coffee farms, Wilmer's journey back to coffee was unconventional. After spending much of his twenties working in the United States, he returned to Colombia nearly a decade ago to fulfil his dream of owning a farm dedicated to producing exceptional specialty coffee.

Today, La Loma is home to carefully cultivated lots of traditional varieties alongside outstanding Pink Bourbon and Geisha. Guided by a philosophy of continuous improvement, Wilmer and Yenni combine meticulous farming with thoughtful processing to produce coffees that express both their terroir and their craftsmanship. Their work reflects a long-term commitment to quality, sustainability and the future of specialty coffee.

This Pink Bourbon begins with the careful hand selection of perfectly ripe cherries, which are floated to remove any under-ripe or defective fruit and ensure exceptional lot consistency. The cherries then undergo a precisely controlled fermentation, with temperature and timing carefully managed to develop complexity while preserving the coffee's clarity and varietal character.

Drying takes place slowly on raised beds, where the cherries are turned regularly to promote even moisture loss. This extended drying process allows sugars from the fruit to gradually integrate into the seed, enhancing sweetness, structure and aromatic complexity.

The result is a cup that offers a beautifully elegant profile with vibrant red berry acidity, the rich sweetness of fig, and delicate floral notes reminiscent of oolong tea.
