Los Suyates is a farm located in the highest elevations of Dipilto, less than 5 km from the border between Nicaragua and Honduras. Los Suyates is located in dense countryside next to El Volcán, a small town above the town of Dipilto Viejo.

Its owner, Mario Gonzales, is a first-generation coffee producer. Once intended for the production of wood pines, Mario transformed this farm into a small coffee paradise nine years ago, planting a range of coffee varieties. Mario Gonzalez owns three different farms in the department of Nueva Segovia, El Amparo, El Avión and Los Suyates, and manages these products as a small family business. Mario's son-in-law, Jairo, is a qualified agronomist and has been heavily involved in setting up coffee growing on each of the three farms.

This lot has undergone carbonic maceration, a process adopted from the world of wine, that allows the coffee to develop more fruity notes and brings body, complexity and richness to the cup.

After harvesting, the cherries are placed in sealed vats and placed in a temperature-controlled room. The fermentation of the fruit produces Co2 and drives oxygen out of the vat. This environment causes fermentation inside the fruit. This step lasts several days until a rich gelatinous texture is obtained. Finally, the cherries are taken out of the vats, and placed on suspended beds under shade.
