The Mountain Water Decaf Quetzal comes from 24 communities located across the Frailesca region and the Sierra Mariscal, crossed by the Sierra Madre de Chiapas, Mexico.
This coffee is influenced by the favourable microclimates of the El Triunfo Biosphere Reserve, which benefits the local biodiversity and the economy. The coffee farms, located between 1,200 and 1,800 masl, are developed into polycultures with significant environmental, social and economic benefits.
The Mountain Water Decaffeination Process, developed by Descamex in Córdoba, Veracruz, uses pure water from Pico de Orizaba to remove caffeine from green coffee beans without chemicals. This method preserves the flavour and aroma of the coffee while removing up to 99% of the caffeine.
The coffee has a caramel flavour profile with hints of citrus, mostly orange on the finish. For those who are used to drinking standard quality decaffeinated, this coffee will be a real eye-opener.
